Fall and Winter Menu 2005

 

Ask about items that can be prepared for your grill: 

 

Chicken, fish, pork chops, or steak, "grill ready" frozen in the marinade of your choice.  Just defrost and go!  Your choice of marinade include, but are not limited to:  Teriyaki, lemon/Rosemary, or Southwest Spices.

 

Poultry Selections

 

Sticky ChickenThis chicken boasts a golden, chewy crust and moist, tender meat.  

 

Individual Pot Pies:  Chicken in a white wine broth topped with Phyllo dough circles.

 

Mexican Chicken and Dumplings:  Boneless skinless chicken thighs in a mildly spiced tomato based gravy topped with corn dumplings and ladled into bowls .

 

Rigatoni with Chicken Sausage in Vodka Sauce:  Combined with Baby Spinach and Fontina CHeese.

 

Chicken Marcela and Mushrooms:  A classic chicken dish with tender breasts of chicken smothered with mushrooms in a timeless marsala sauce.

  

Santa Fe Chicken with Chipotle Cream Sauce:  A smokey Chipotle Cream sauce compliments the tender seasoned chicken breasts.  Mild, Medium, or Spicy?

 

Chicken Parmesan:  Boneless chicken breasts lightly breaded with seasoned breadcrumbs, pan-fried in olive oil, topped with Parmesan, mozzarella and broiled until golden.  Served with a side of marinara.

 

Chicken Basil Piccata:  Chicken breasts seasoned with capers, lemon juice and white wine.

 

Madame's Bistro Chicken:  Chicken, tomatoes , vinegar and garlic. 

 

Chicken Manicotti:   Seasoned chicken stuffed in a manicotti shell topped with marinara and cheese.

 

Chicken Enchiladas:  Breasts of chicken rolled in a flour tortillas, smothered in a tomatilli cream sauce.  Topped with jack and cheddar cheese.

 

Thai Coconut Chicken Breasts:  Marinate with ginger, cilantro, chili pepper and coconut milk..  Served with a peanut dipping sauce

 

Sesame Chicken:  Baked in a honey mustard sauce and topped with sesame seeds.

 

Mojito CHicken:  Boneless skinless chicken in a lime rum sauce that is perfect when you're in the mood for Cuban.

 

 Stuffed Chicken Breasts

 

Boursin cheese, walnuts and shredded carrots:  Rolled chicken breasts dipped in a breadcrumb mixture and baked until golden.

 

Brie, Carmelized Onion and Apple:  Seasoned with sage and cooked in a wine sauce.

 

Goat cheese, Spinach and Pine nuts:  The cheese makes it tangy

 

Chicken Cordon Bleu:  French ham and Swiss cheese topped with bearnaise sauce.

 

 

Fish and Seafood

 

**Maryland Crab Cakes:  A classic dish.  My crab cakes do not have a lit of filling.  Seasoned to perfection and sauteed.

 

**Seafood Bisque Casserole:  Shrimp, crab, scallops, red pepper and mushrooms in a sherry laced cream sauce, topped with breadcrumbs, and baked until golden.

 

Red Snapper with Butter Toasted Pecans:  Pan seared with spicy seasonings and toasted pecans.

 

Salmon seared in a pepper crust:  A marinade of soy, garlic, and lemon juice and seared in a coarse pepper rub.

 

Coriander Salmon:  A coriander rub pan seared until flaky.  Delicious hot or cold.

 

Spinach Stuffed Salmon Filets:  Spinach combined with sundried tomatoes, pesto, and pine nuts.

 

Seared Salmon with Balsamic Sauce:  A slightly sweet sauce makes the tender salmon filets and irresistible dish.

 

**Greek Style Shrimp Scampi with Feta and Tomatoes:  Shrimp slowly simmered with green peppers and green onions, tomatoes and feta cheese.  Served with rice.

 

Pesto Covered Orange Roughy:  This oven baked fish is coated with a light crumb pesto coating

 

**Halibut Baked with Tomatoes, Capers and Herbs with a Feta Crumb Crust:  Arranged in layers in a baking dish with red wine and fresh basil.

  

Beef Selections

 

Lasagna with Meat Sauce:  Classic Italian dish served with salad and garlic bread.

 

Ina's Tamale Pie:  A Tex-Mex favorite!  Cornbread layer, well-seasoned group beef or turkey, topped with cheddar and jack.

 

Neno's Pot Roast:  Slowly cooked all day with carrots, onions and potatoes in a tangy beef gravy.

 

Swedish Meatballs:  Scandinavian staple, served with egg noodles.

 

Classic Chili:  Warm up to a bowl of chili on a cold winter night or a Sunday afternoon watching the football games.  Topped with cheddar cheese.

 

Spiced Sheper's Pie with Potato Feta Toppings:  Ground lamb combined with  mint cinnamon and oregano,  A favorite Greek dish.

 

MEATLOAF

 (Any selection may be prepared with ground turkey)

 

Traditional Style:  pure American fare, with gravy if you'd like.

 

Atkins Low Carb Meatloaf:  A favorite even if your not low carbing it.

 

Bacon Mushroom and Swiss:  Rich and sinfully delicious.  Another good one for Atkins dieters.

 

Italian Meatloaf with Fresh Basil and Provolone:  Sundried Tomatoes and garlic compliment this meatloaf.

 

Apple Meatloaf:  A unique taste with Granny Smith Apples and horseradish baked in a muffin tin and topped with an apple glaze.

 

Pork Selections

 

Rosemary Roasted Pork Tenderloin:  Marinated in a light rosemary sauce and grilled to perfection.

 

Baby Back Ribs:  The Kowalczyk family's favorite.  Ribs rubbed with a blend of spicy seasonings and mopped with a vinegar sauce.  Best heated on the grill.

 

Italian Spaghetti Casserole:  Angel hair topped with mozzarella chopped tomatoes, Italian sausage and mushrooms.  Topped again with Parmesan cheese.

 

Pork Medallions with Pear Sauce:  Pork tenderloin served with a pear gravy.

 

Jerk Pork Tenderloin with Black Beans:  A little hot, very flavorful, authentic Caribbean fare with a side of black beans and cilantro.

 

PORK CHOPS

 

Pork chop entrees are prepared using thick, center cut, loin chops trimmed of all visible fat.  To insure chops are tender and remain juicy during freezing and heating, I use a special brining method.

 

In Balsamic/Merlot Reduction:  Simmered with thyme, bay leaf, shallots and garlic, a popular dish that is delicious with garlic mashed potatoes.

 

Cider Brined Pork Chops with Creamed Leeks and Apples:  A lovely flavor but best served on cheffing day.

 

 

Vegetarian

 

Black Bean & Sweet Potato Burrito:  Seasoned with red pepper, cilantro, cumin and limejuice, rolled up in a whole wheat tortilla and topped with cheddar and jack.

 

Eggplant Lasagna:  Carolyn's favorite and thinks it can't possibly be healthy...but it is.  Eggplant baked and drizzled with olive oil .

 

Twice Baked Potatoes with Spinach, Mushrooms and Tofu:  A Idaho baker, mashed, seasoned, and then combined with the above ingredients.

 

Spinach Carmelized Onion and Feta Quiche:  The salty feta provides a sharp contrast to the sweet caramelized onion and spinach, but swiss or Gruyere will work too, if you prefer a mellower flavor. 

 

Not Meatloaf:  Oats, buts, and seeds flavor this satisfying and hearty dish.  Served with Mushroom gravy.

 

Thai Noodles with Artichoke Hearts:  cilantro, mint, green onion and Asian Vinaigrette.
